The trick to the Age of Wonders III campaign is to rush them all. Always be advancing.This is somewhat true of random scenarios too, but especially so in the main game.Another tip is that levelled up troops can be really really good. The temptation to turtle up to knights is strong, but with some levels up priests and footmen you can easily take on the AI. Because of this its sort of crucial you don't let experienced troops die, a bit like Xcom in that sense.
Luckily you can usually bait the AI with some trash summon while you set up flanks etc.The ai is also fairly competent and so auto battles usually play out as they suggest, but you can pretty much always do a better job yourself, so always play out a fight to ensure troop survival and level up. The campaigns in the age of wonders series has always been fairly brutal, especially the early missions. The biggest issue I think you have is that you are, as you say, turtling. Unlike random maps or scenarios, in the campaigns the enemy always start with a vast amount of holdings and cities.
This means that they'll start producing hordes of units very quickly if not kept in check.The answer to this is quite simply to become more agressive. You have some very powerful units in your Heroes that can with the support of a few strong regular units blitz through a lot of the early holdings of the AI before he has time to produce a lot of units. (Make sure you power up your heroes by exploring all the high level ruins for legendary and mythical equipment in the earlier maps, as well as gathering a lot of exp) Take advantage of this and carve out a large amount of holdings, and even then it would be a mistake to settle down and consolidate. Keep expanding, because every turn you do not expand, the enemy grows stronger.All that being said, don't bite off more than you can chew. You should avoid losses as much as possible. Try to always have the numerical advantage whenever you're attacking something.You're still likely to need to restart a few times due to not knowing the map and missing key things, as well as quirks of the maps themselves.Finally, have you considered checking out some youtube videos of the campaigns? I'm not saying watch the entire thing, but you might be able to pick up some tips and tricks that will help you.
As others have said, blitz. The problem with defending is that at the start of a map you're at a point where the AI has significantly more production and resources than you. There's a sort of breather point in each mission where once you've taken a certain amount of cities, you can relax and play more defensive because the AI no longer has that advantage.
In the third Elven Court mission I think there's a cluster of three Dwarven cities to the west? Once you take them you should be good to go into defensive mode.The other important thing is getting more experienced with the combat. Your starting army and the troops you'll get from liberating Goblin cities will be more than enough to take those Dwarven cities, but that might take a bit of practice with the combat system first.
